Summer Surprise

A friend of mine mentioned that I had not updated my blog lately. I'm certain this is not what she had in mind, but I think she will enjoy it anyway.

A new friend from my new job happened to bring in this great antipasta salad during an office snack day. I asked for the recipe and this is what she gave me:

This Recipe came from the Kraft Kitchens website. I made a couple of alterations of my own, and I put them in down below. It's called the Tortellini Antipasto Salad. Turned out pretty well, huh? : ) Glad you liked it!


2 pkg. (9 oz. each) DI GIORNO Three Cheese Tortellini, cooked, drained and rinsed
One bottle of italian salad dressing

1 small red onion, finely chopped
1 pkg. (8 oz.) Mozzarella Cheese, cubed (I cubed some string cheese sticks)
1 large green pepper, chopped
2 cups cherry tomatoes, halved (or whole grape tomatoes work too!)
1 can (2.25 oz.) sliced pitted ripe olives, drained

COMBINE all ingredients; cover.
REFRIGERATE several hours or until chilled.

I promise Cindy, I will update more in the near future. I just need to get a handle on my schedule. = )
